QUINOA SALAD WITH CREMINI MUSHROOMS AND BLANCHED KALE
I decided to spice up and vary my plate of veggies, so I planned yet another quinoa salad, and this time I made it with cremini mushrooms, blanched kale, diced red peppers, and green onions, then complimented with my usual assortment of veggies, namely tomatoes, cucumbers and avocado and added some chunks of parmesan cheese. The olive oil and apple cider vinegar brings it all together! Mmmmm, so delicious!
